Alon Shaya’s Whole Roasted Cauliflower with Whipped Feta

Ingredients

  • 6 1/2 cups cold water
  • 2 1/3 cups white wine
  • 4 tablespoons Kosher salt
  • 1 whole bay leaf
  • Juice of 1 lemon
  • 4 teaspoons
 crushed chili flakes
  • 2 1⁄2 teaspoons granulated sugar
  • 2 tablespoons 
unsalted butter
  • 6 tablespoons 
extra-virgin olive oil
  • 1 whole large head cauliflower, green leaves on bottom trimmed off

Instructions

Pre-heat oven to 550 degrees or its highest setting.

In a 4-quart sauce pan, combine all ingredients along with cauliflower. Place on medium heat and bring to simmer. Let cook for approximately 15 minutes or until you can easily insert a knife through the center. Be careful not to overcook it, or it will fall apart when you try and remove it from the pan.

Using a slotted spoon, carefully remove cauliflower from the poaching liquid and place onto a baking sheet. Place into the oven and cook until golden all over the top.

Remove from the oven and drizzle with a little coarse sea salt and extra-virgin olive oil. Serve with whipped goat feta cheese.
