Glow Pesto

Fresh-made basil pesto with skin-loving pumpkin seeds, loads of garlic and buttery avocado oil.

Ingredients

  • 1/4 cup pumpkin seeds*
  • 4 to 5 cloves garlic, smashed and peeled
  • 2 cups basil leaves, washed and patted dry
  • Juice of 1/2 lemon
  • 1/2 cup grated Parmesan cheese
  • 1 cup avocado oil (or extra-virgin olive oil)
  • 1/2 teaspoon sea salt

Instructions

In a blender or food processor, combine pumpkin seeds and garlic until finely chopped.

Add basil, lemon juice and Parmesan and blend.

With motor running, slowly add avocado oil until well combined. Season with salt and blend well.

Store covered in a glass jar and keep refrigerated.

*substitutes: walnuts or pine nuts
