Cauliflower Mash

Healthy comfort food that pairs with literally everything. Chock full of Vitamin C, cauliflower is not only versatile, it’s detoxifying! As a suppertime side dish solution, you’ll make this baked Cauliflower Mash again and again.

Ingredients

  • 1 large head cauliflower, trimmed and quartered
  • 4 cups (32-ounce box) low-sodium chicken stock
  • 3/4 cup (6-ounce container) nonfat Greek yogurt
  • 1 tablespoon avocado oil or grass-fed butter, optional
  • 1/2 teaspoon salt or to taste
  • 1/2 cup grated Parmesan cheese, plus more for optional topping

Instructions

Preheat oven to 350 degrees.

In a medium saucepan, combine cauliflower and chicken stock and bring to a boil. Simmer until tender, about 15 minutes.

Drain cauliflower. Add Greek yogurt, avocado oil or butter and salt. With a hand blender or mixer, purée well until smooth. Stir in Parmesan cheese and transfer to a baking dish. Sprinkle with additional Parmesan, if desired.

Bake until warm, about 12 minutes.

Serves 4
