Make sangria with a wine you like to drink. Use inexpensive fruity wine (not your best Pinot, but something very drinkable) for red sangria. For white sangria, lean to dry whites such as Sauvignon Blanc or Pinot Grigio.

Hosting tip: Sangria is pre-batched before topping with bubbles and should be made to order. Serve guests as they arrive or allow guests to serve themselves. Do not pour glasses of sangria over ice and top with bubbles before guests arrive. Takers who arrive later will end up sipping watered down sangria and with sad, lifeless bubbles.
