Eat the rainbow, drink the stars!
All of the pleasures of pizza without the gluten, gut-wrenching toppings or guilt! Top store-bought cauliflower pizza crust (we love Caulipower brand, found in the frozen food aisle) with homemade pumpkin seed basil pesto (aka Glow Pesto) and pile on a spectrum of colorful veggies.
With loads of detoxifying garlic and mounds of yellow and red bell peppers rich in Vitamin C, Rainbow Pesto Pizza is one of our favorite party pick-ups, especially when the cocktails and bubbles are flowing!
Glow Pesto
Fresh-made basil pesto with skin-loving pumpkin seeds, loads of garlic and buttery avocado oil.
Ingredients
- 1/4 cup pumpkin seeds*
- 4 to 5 cloves garlic, smashed and peeled
- 2 cups basil leaves, washed and patted dry
- Juice of 1/2 lemon
- 1/2 cup grated Parmesan cheese
- 1 cup avocado oil (or extra-virgin olive oil)
- 1/2 teaspoon sea salt
Instructions
In a blender or food processor, combine pumpkin seeds and garlic until finely chopped.
Add basil, lemon juice and Parmesan and blend.
With motor running, slowly add avocado oil until well combined. Season with salt and blend well.
Store covered in a glass jar and keep refrigerated.
*substitutes: walnuts or pine nuts
