Blue Dog Mezcal Margarita Gelatin Shooters

Named for the iconic Blue Dog by New Orleans artist George Rodrigue, blue margarita shots with a hint of smoky mezcal kick the party up a notch.

Ingredients

  • 2 envelopes unflavored gelatin
  • 1 cup boiling water
  • 1/4 cup agave nectar
  • 1/2 cup tequila blanco
  • 1/4 cup mezcal
  • 1/4 cup blue Curaçao
  • 1/4 cup fresh-squeezed lime juice
  • Sprinkle of salt
  • Pomegranate seeds for garnish
  • Rosemary sprigs for garnish

Instructions

In a medium bowl, sprinkle gelatin over boiling hot water and whisk until smooth. Add agave and stir until combined.

Allow to cool slightly and transfer to a glass measuring cup or small pitcher. Add tequila, mezcal and lime. Stir to combine.

Pour about 1 1/2 ounces into shot glasses. Lightly sprinkle a little salt into each shot. Drop a few arils (pomegranate seeds) into each cup.

Chill at least 8 hours or overnight.

To serve, garnish with more pomegranate seeds. Remove leaves from bottom half of rosemary sprigs and stick in each gelatin shot.

Makes about 16 shooters
