Cranberry-Rosemary Purée

Cranberries simmering on the stove go “pop, pop, pop!” just like chestnuts in the classic Christmas song, “Sleigh Ride.” Rosemary adds an earthy note with all the warmth and nostalgia of the season.

Ingredients

  • 1 1/2 cups fresh cranberries
  • 1 cup water
  • 1 cup local raw honey
  • 2 sprigs fresh rosemary

Instructions

Combine cranberries, water and honey in a saucepan set over medium-high heat. Stir to dissolve honey and simmer until berries begin to pop, about 5 to 7 minutes. Do not allow to boil.

Remove from heat and stir in rosemary. Allow to steep and cool, about 10 to 12 minutes.

Remove rosemary and discard.

With an immersion blender or food processor, purée until smooth, about 1 minute. Strain and discard solids. Transfer to a glass container.

Cover and keep chilled.
