Dirty Martini Egg Salad

Clean comfort food with all the dirty martini vibes.

Ingredients

  • 8 hard-cooked eggs, peeled and chopped
  • Small jar pimento-stuffed olives in vermouth, drained and chopped (about 3/4 cup), reserving olive juice
  • 3 ribs celery, small dice
  • 3 tablespoons mayonnaise
  • 1 to 2 tablespoons reserved olive juice
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon black pepper
  • Salt to taste, optional

Instructions

In a large bowl, combine eggs, olives and celery. Fold in mayonnaise and olive juice. Add cayenne, black pepper and season to taste if needed.

Cover and chill at least 1 hour before serving.

Serve in chilled martini glasses with crackers or spooned over lettuce.
