Kale Caesar Deviled Eggs

The ultimate detox salad turned into deviled eggs!

Ingredients

  • 6 hard-cooked eggs, preferably pastured, cooled and peeled
  • 1 recipe Caesar dressing, recipe follows
  • 1 1/2 cups kale leaves, stemmed and finely chopped
  • 2 tablespoons Greek yogurt, optional
  • Smoked salmon (sustainably farmed) for garnish
  • Pumpkin seeds, for garnish

Instructions

Place yolks in a medium bowl and mash with a fork. Slowly incorporate Caesar dressing until desired consistency. If mixture needs to be creamier, stir in Greek yogurt.

Spoon into egg whites. Cut smoked salmon into 1 1/2-inch by 1/2-inch pieces. Roll diagonally into curls and top eggs.

Garnish with raw or roasted pumpkin seeds.
