Lavender French 75

An earthy, floral play on the classic cocktail topped with sparkling rosé. Batch the base mix and top with bubbles when ready to serve.

Ingredients

  • 1 1/2 ounces London Dry Gin, such as Beefeater
  • 1/2 ounce lemon juice
  • 1/2 ounce lavender syrup, recipe follows
  • Sparkling rosé to top
  • Dried or fresh lavender for garnish

Instructions

Combine gin, lemon juice and lavender syrup in a shaker and add ice. Shake and strain into a coupe. Top with sparkling rosé. Garnish with fresh lavender or a lemon twist.

Lavender Syrup

Combine and heat 1 cup sugar and 1 cup water, stirring continuously to dissolve. Do not allow to boil. Add 1 tablespoon dried or fresh lavender, remove from heat and steep for 15 minutes.

Allow to cool and strain into a jar or squirt bottle.

Keep chilled, for up to 1 week.

Batch it!

Combine 3 cups gin, 1 cup lemon juice, 1 cup syrup and 3/4 cup water (to account for dilution). Combine and keep chilled.

Just before serving, stir to combine. Pour mix into coupes about ½ full. Top with chilled sparkling rosé. Garnish with lavender.

Makes about 16 drinks
