Spicy Tangy Pimento Cheese (mayo-free)

Greek yogurt stands in for mayo in this tangier variation and no one misses it!

Ingredients

  • 1 (8-ounce) block white sharp cheddar cheese
  • 1 (8-ounce) block extra-sharp cheddar cheese
  • 1 (7-ounce) jar pimentos, drained, reserving liquid
  • ¼ cup Greek yogurt
  • 1 heaping tablespoon Dijon mustard
  • 1 teaspoon fresh-squeezed lemon juice
  • 2 tablespoons pickled jalapeños
  • 4 dashes hot sauce
  • Cracked black pepper to taste
  • Paprika, optional
  • Pickled okra, optional

Instructions

Using a food processor or hand grater, grate the cheese. Place cheese in a large bowl. Add remaining ingredients. Stir with a large fork.

For a wetter pimento cheese, add one teaspoon of reserved pimento liquid. Stir. If desired, sprinkle with paprika and place pickled okra on top.

Serve with crackers.

Makes 4 cups

For healthier options, top cucumber slices with pimento cheese or pile high on top of pickled okra halves for a fun twist.

For testing purposes only, I used Kroger’s Private Selection extra-sharp Vermont white cheddar cheese, Cracker Barrel’s Sharp Cheddar and Simple Truth organic Greek yogurt. – Leslie Sorell
