Using a food processor or hand grater, grate the cheese. Place cheese in a large bowl. Add remaining ingredients. Stir with a large fork.
For a wetter pimento cheese, add one teaspoon of reserved pimento liquid. Stir. If desired, sprinkle with paprika and place pickled okra on top.
Serve with crackers.
Makes 4 cups
For healthier options, top cucumber slices with pimento cheese or pile high on top of pickled okra halves for a fun twist.
